I have a story about this easy 3 ingredient banana bread recipe that I’m going to share with you today. It’s a food item that’s very close to my heart. 🙂

You see, a little more than just a few years ago, when I first found out that I was pregnant with Kennedy, the very first thing that came to my mind that I needed to do, before anything else, was learn to cook. Well, first I told Chris, but THEN, I needed to learn to cook. Not get a crib. Not learn how to change a diaper. Not figure out which preschool she would go too, or even how much all of that would cost. First, I needed to learn to cook. Because, in my mind, real moms should have a good tasty recipe up their sleeves to be able to create a nice happy home environment for their family. It just feels right to me.

So, the day after I found out, I sat down at the kitchen table with my roommate’s copy of the Joy of Cooking and I started copying down recipes that I thought seemed “mom-ish” and that I could probably learn pretty easily. The first one was for banana bread. Wait, did you catch that? That’s right. At the time, I didn’t even live with Chris yet, I still lived with a couple of friends. I know! Scandal!Well, it’s true. No point in hiding it, right? You know what though? (Spoiler alert) It all turned out just fine. 🙂 And the banana bread helped. Still to this day, if I feel like I need to create that nice, comforting, everything’s-gunna-be-alright kind of atmosphere in my house, even just for myself, I make banana bread.

And now I make it even faster! Here’s the recipe!

Best Banana Bread Ingredients

Here’s what you’ll need to make this classic banana bread. It’s super simple and quick to throw together any time you like, but it still tastes just like homemade and it just works every time.

  • Golden cake mix
  • Bananas
  • Eggs or a plant-based substitute

That’s really it! No need for butter or oil and no condensed milk in this recipe! If you prefer not to use store-bought cake mix, you can make your own homemade cake mix ahead of time and store it in bulk. That way you can completely control what’s in your food without sacrificing any of the convenience of this recipe. Use overripe bananas if you have them for the best flavor. If you want to make a vegan banana bread, just make sure your cake mix has no milk in it and use a plant-based egg substitute, chia seeds, or ground flaxseed instead.

All you really need to do to make this not too-sweet banana bread is mash your bananas and then in a large bowl whisk in the cake mix and eggs. Bake it in a large loaf pan (this is the one I use here) for about 55 mins at 350 degrees on the middle oven rack. If you need to mix the batter and then stick it in the fridge for a few hours before you have a chance to bake it because your baby is getting bored of sitting in his chair waiting for you to be done, that’s fine too. I tested it many times when Jack was just little.

You shouldn’t need to use parchment for your baking pan for this recipe. Just cool the loaf pan on a wire rack for about 15 or 20 minutes after baking and the whole thing will just pop right out.

I’ve tried quite a few recipes for banana bread, and honestly this was one of my favorites. I definitely wouldn’t call it healthy with the cake mix, but it really hits the spot when you’re in that banana bread kind of mood and you just need to make something warm and comforting. You can freeze banana bread in slices for a treat later if you can’t stop yourself from eating more and more because it’s just that good. Chris even eats this banana bread whenever I make it and he used to not really be a banana bread guy at all.

A Few Fun Variation Ideas

The possibilities are really endless with this recipe, but here are a few favorite ideas.

Adding semi-sweet mini chocolate chips is always a classic variation and you could even top it with my Chocolate Glaze with Cocoa Powder for a really impressive and decadent-looking presentation.

You can make this recipe into large banana muffins by lining a muffin tin with a dozen muffin liners then dividing the batter between them. This is a great idea for easy breakfasts on-the-go or a lunch box treat.

Add 1/2 cup of macadamia nuts to your batter before pouring it into your loaf pan to make an amazing banana nut bread.

Instructions

  1. Combine the eggs and bananas in a large bowl until well blended.

  2. Add in the cake mix and stir until everything's just combined.

  3. Pour your batter into a large loaf pan and bake at 350 for about 40 minutes or until a knife inserted in the middle of the loaf comes out clean.

  4. Allow to cool for a few minutes before slicing.

  5. Share and enjoy!

Definitely give this one a try next time you want to have that “look at me I’m such a good mom-ish type person” feeling but you only have about 2.5 minutes in which to do it. Then definitely let me know if you love it as much as I do!
