I am not a morning person, but over time I have increased my tolerance of the morning and one of those ways is by being prepared. My time is precious so I do all I can the night before. Sometimes this includes prepping overnight oats, portioning out granola and blueberries, or when I need a change creating these egg muffins. I am all about the easy breakfast ideas. I actually made these for the first time for a morning football tailgate and they were a hit. You can customize them with your own favorite ingredients. I added bacon, spinach, tomato, and cheddar cheese.

LET'S GET COOKING:Easy Breakfast Ideas

Breakfast Recipe - Egg Muffins

INGREDIENTS:

(Makes 12 servings)

12 eggs

1/2 cup of milk

1/2 package of bacon fried in skillet

1/2 cup shredded cheddar cheese + more for topping

1 bag spinach lightly sautéed

2 roma tomatoes diced

1/4 cup onions diced

Garlic powder

Onion powder

Salt + Pepper

INSTRUCTIONS:

Preheat oven to 350 degrees

Cook bacon over medium heat in a skillet, set aside. Lightly sauté bag of spinach, set a side.

In a large bowl crack 12 eggs and whisk breaking the yolks and combining evenly. Add milk, bacon, spinach, onion, tomatoes, cheddar cheese, garlic powder, onion powder, salt and pepper. Gently stir combining evenly.

Line the muffin tin with paper muffin liners.

Scoop mixture into muffin tin filling each muffin about 1/2 way (about 1/3 c). Add a pinch of cheese to the top of each muffin.

Place in oven for 20-25 minutes.

Serve and Enjoy!
