Stroganoff is a well-loved classic family dinner that combines browned ground beef or seared steak in a tangy, flavorful gravy! You'll love how quickly your ground beef stroganoff dinner will come together no matter how much time you have for meal prep!
It's perfect for even a beginner cook, as the recipe is extremely forgiving with a flexible sauce. Plus, it can be tailored easily to your likes and scaled up or down for more or less servings!

🥘 Ground Beef Stroganoff Ingredients
This homemade ground beef stroganoff is made using common household ingredients. I wouldn't be surprised if you already have everything you need!
- Olive Oil - 1 tablespoon of extra virgin olive oil (EVOO).
- White Onion - ½ of a small onion (diced), yellow onion varieties work here as well.
- Ground Beef - 1 pound ground beef, use a good quality beef like ground chuck.
- All-Purpose Flour - ¼ cup of flour.
- Seasoning - 2 teaspoons of garlic powder and 1 teaspoon each of paprika, salt & pepper to taste.
- Beef Broth - 2 cups of beef broth. For my broth, when available, I like to use beef bone broth. If you don't have broth on hand. You can use either the Better Than Bouillon or bouillon cubes to make your 4 cups of broth as well.
- Mushrooms (optional) - 8 ounces of mushrooms. I use white mushrooms or baby bella (cremini) mushrooms.
- Worcestershire Sauce - 2 tablespoons of Worcestershire sauce, use less if you're not a fan! The brand you use will change the flavor of the sauce. (*See Notes)
- Sour Cream - ½ cup of sour cream.
- Egg Noodles - 4 cups of dry pasta. You can use whatever pasta you like, some good choices are penne, tagliatelle, egg noodles, or linguini.
- Parsley - Optional garnish.

🔪 How To Make Ground Beef Stroganoff
This 30-minute meal is incredibly simple and doesn't require any special cooking techniques or tricks! All you need is a large skillet, a wooden spoon, a cutting board, a knife, and your measuring utensils.
As written, you will have about 8 servings of stroganoff, but you can easily double the recipe if your skillet is large enough!
- Heat. In a large skillet or frying pan, add 1 tablespoon (15 milliliters) of extra virgin olive oil and bring to medium heat.
- Saute. Once the olive oil is shimmering, add ½ of a diced onion and cook until translucent, about 2-3 minutes.
- Brown the meat. Add 1 pound (454 grams) of ground beef and cook until browned about 5 minutes. Break apart the ground beef into chunks while the beef cooks. Drain off excess fat from the pan.
- Prepare noodles. Cook 4 cups (152 grams) of noodles per package instructions while you are browning the ground beef. Drain and rinse. Toss with olive oil or butter if desired.
- Mix. Add ¼ cup (31 grams) of flour and seasoning (2 teaspoons/6 grams of garlic powder, 1 teaspoon/2 grams of paprika, and salt and pepper to taste). Start with about ½ teaspoon each and add more as needed once the sauce comes together. Combine with the browned ground beef.
- Add. Stir in 2 cups (473 milliliters) of beef broth and 2 tablespoons (30 milliliters) of Worcestershire sauce and bring to a boil.
- Thicken. Next, reduce heat and simmer for about 10 minutes or until the sauce is thickened.
- Stir. Remove from heat and stir in ½ cup (115 grams) of sour cream.
- Serve. Serve over cooked noodles (or rice) and garnish with 2 tablespoons (8 grams) of parsley.
🥗 Sides
Steamed vegetables are a great first choice for a side dish, and I typically serve up green beans as a side. I also frequently opt to serve a side salad or garlic bread with my beef stroganoff.

💭 Tips & Notes
- The Worcestershire sauce that you use will affect the flavor of the sauce. Heinz brand is sweeter than Lea & Perrins, for example. Typically, when making any beef stroganoff, I know that I have to use less when using the tangier Lea & Perrins brand.
- You can opt for lean ground beef, but I do think the flavor with ground chuck is the best...making it totally worth the bit more fat I have to drain off after browning the ground beef.
- However, if you are looking for a leaner version definitely go with the lean ground beef, low-sodium beef broth, and the low-fat sour cream.
- If you have picky eaters that won't like the onion pieces in the sauce, omit the diced onion and use 1-1½ teaspoons of onion powder instead.
- If you are using the optional mushrooms, they can be cooked first in the olive oil (saute for about 5 minutes) and then transferred to a plate to either include in the sauce last minute. Or, serve over the pasta and Ground Beef Stroganoff when dished up.
🥡 Storing & Reheating
Let your stroganoff cool completely, and then place it into a food storage container. Keep it stored in the fridge for 3-4 days.
If you have any leftovers, you can use them to make some delicious beef stroganoff pot pie!

Reheat any leftovers in a skillet on the stovetop over medium heat.

What is Beef Stroganoff Served With (Over)?
The silky, rich, and creamy sauce can be served over pasta (as seen here, and buttered noodles are the best!) or white rice, mashed potatoes, and even atop shoestring potatoes (French fries) as frequently and traditionally done in Russia.
Can I Freeze Ground Beef Stroganoff?
Yes! Let your stroganoff cool completely and then transfer it into a sealed, freezer-safe container. It can be frozen for up to 3 months. When ready, just thaw it in the fridge overnight before reheating.
Can I Make Stroganoff With Mushrooms?
Sure! I even went ahead and listed mushrooms as an optional ingredient. If you aren't a fan, you can simply omit them entirely and your stroganoff will still be completely delicious!

- 1 tablespoon olive oil (extra virgin)
- ½ small white onion (diced)
- 1 lb ground beef (ground chuck is preferred)
- ¼ cup all-purpose flour
- 2 teaspoon garlic powder
- 1 teaspoon paprika
- salt & pepper (to taste)
- 2 cups beef broth
- 8 oz mushrooms (optional, use white button or baby bella mushrooms - sliced)
- 2 tablespoon Worcestershire sauce
- ½ cup sour cream
- 4 cups egg noodles (dry, cook as directed on package)
- 2 tablespoon parsley (optional - fresh, chopped)

Instructions
In a large skillet or frying pan, add olive oil and bring to medium heat. Once the olive oil is shimmering, add diced onion and cook until translucent, about 2-3 minutes.
Add ground beef and cook until browned, about 5 minutes. Break apart the ground beef into chunks while the beef cooks. Drain off excess fat in the pan.
Cook noodles per package instructions while you are browning the ground beef. Drain and rinse, toss with olive oil or butter if desired.
Add the flour and the seasoning (garlic powder, paprika, salt and pepper) starting with about a ½ teaspoon each and add more seasoning (to taste) once the sauce comes together, combining with the browned ground beef.
Stir in the beef broth and Worcestershire sauce and bring to a boil. Reduce heat and simmer for about 10 minutes, or until sauce is thickened.
Remove from heat and stir in the sour cream. Serve over cooked noodles (or rice) and garnish with parsley.
Notes
- If you have picky eaters that won't like the onion pieces in the sauce, omit the diced onion and use 1-1 ½ teaspoon onion powder instead.
- If you are using the optional mushrooms, they can be cooked first in the olive oil (saute for about 5 minutes) and removed to a plate to either include in the sauce last minute or serve over the pasta and Ground Beef Stroganoff when dished up.
- Not a fan of Worcestershire sauce? Add a small amount and adjust to taste or omit entirely.

It can be made in advance, however, it is best when fresh. To make this dish in advance, I would store my pasta and sauce separately, then combine when serving. Thanks for asking!

I made this for dinner tonight and it tastes really good! Only issue is I found the broth to be a bit much. I did thicken the sauce more with an extra tablespoon of flour. I didn't have sour cream on hand so I used cream fraiche in its place. This recipe paired beautifully with penne pasta. I would make this again! Thanks for sharingReply

The flour is added to the ground beef as the sauce thickener (the broth is added in the next step). Once the sauce is combined, the gravy or stroganoff sauce usually thickens beautifully. However, if desired, the sauce can be thickened using a slurry of flour and cold water before serving.

Followed recipe the first time then made my tweaks the second time by mixing in bread crumbs and an egg into the ground beef. (The bread crumbs help the meat retain more moisture. We like juicier beef. ❤️)This review is for when I made the stroganoff the first time by following the recipe.

I have tons of great sour cream substitutes here https://bakeitwithlove.com/sour-cream-substitute/ it will just depend on what you have on hand. Thicken with a flour/water slurry as needed if you only have thin consistency dairy around (like milk or half & half) but heavy cream is a great option.
