Folks, it’s that time of year for hearty meals that require manly portions and stretchy pants. So, ain’t nobody got time for the same old classic green bean casserole recipe with those nasty fried onions. You want something that will feed your hungry and not kill you.

Let me introduce you to a green bean casserole that defies all logic. It’s the Vegan Green Bean Casserole With Onion Rings! And, I do mean…ONION RINGS!

Classic green bean casserole was one of my favorite dishes growing up. The creamy, savory, and hearty dish covered in those little fried onions was unforgettable. And, it was healthy right? I mean, it had green beans in it.

Wrong! We all know there’s nothing healthy about it.

But, what if you could make a green bean casserole from scratch that met all the requirements of the famous holiday dish and it was healthy too?

Is it possible? YES, absolutely!

I’ve wanted to make a healthy version of green bean casserole for several years. But, could never come up with one that just worked and was “easy.”

And, then it hit me. Why not just combine two or three of my previous recipes and make one incredible dish? So, I did.

How To Make Green Bean Casserole Vegan

It’s all about using what you got. So, instead of trying to reinvent the wheel that’s exactly what happened.

First, I used my Vegan Cream of Mushroom Soup, my Tofu Sour Cream and three cans of low-sodium cut green beans. You could also use my Cashew Sour Cream as well. It works just fine. Just combine the sour cream, soup, green beans and bake for a few minutes. Super easy and delicious.

Now, you could stop right there and this would be one fine green bean casserole. But, I wanted to take it up a notch!

So, in order to take this thing super incredible I decided to top this bad boy with my Crunchy Oven Baked Onion Rings! Yes! Full-size onion rings.

Not those wimpy ass fried shoestring things they sell at the grocery store.

These onion rings are savory, crunchy, a little salty, and the size of manhole covers. The perfect topping for this amazing dish!

Ingredients

  • 3 15-oz. cans of no salt added or low-sodium cut green beans
  • Shane & Simple Creamy Vegan Mushroom Soup
  • Shane & Simple Tofu Sour Cream or Cashew Sour Cream
  • Shane & Simple Crunchy Oven Bake Onion Rings

Instructions

  1. Preheat oven to 450 degrees so you can make onion rings.
  2. While oven is heating up, make sour cream and mushroom soup then set aside.
  3. Next, make the onion rings according to recipe on Shane & Simple. Once they are finished, remove from oven and set aside.
  4. Decrease heat on oven to 350 degrees.
  5. Combine green beans, entire recipe of mushroom soup and sour cream into large bowl and mix well.
  6. Pour mixture into a large baking dish or cast iron skillet and bake in oven for 10 minutes. Remove from oven, top with cooked onion rings, and bake for another 5 minutes.
  7. Remove from oven and serve.
